Healthy Red Velvet Pancakes



Right now we're in the middle of yet another blizzard. Valentine's Day is tomorrow, we're buried underneath eight inches of snow and there's a 100% that I'm not moving from underneath these blankets for at least the next 48 hours.


Thankfully, we're holed up in the middle of a blissful snow day filled with puppies, Bloody Caesars and American Horror Story.





















The only thing missing? Pancakes.

And because tomorrow is Valentine's Day, they obviously need to be red velvet pancakes. But really, how sweet do they look?




Instead of syrup, top it with cream cheese frosting. Because everything is better with cream cheese frosting. (I thinned some out with a bit of almond milk to make it more syrupy.)

Recipe:
2 Tbs whole wheat flour
2 Tbs coconut flour
1 Tbs Unsweetened Cocoa Powder
1 Tbs stevia
1/2 tsp baking powder
1 tsp vanilla extract
2 Tbs unsweetened apple sauce
1/3 c unsweetened almond milk


Directions
1. Combine dry ingredients. Whisk together with vanilla, apple sauce and milk.
2. Heat lightly greased or sprayed pan over medium heat. Cook for about four minutes on each side. 

The entire recipe should make 3 small pancakes.

Nutrition: 1 serving = 156 calories
Carbs: 28g Fat: 4g Protein: 4g
